This collection is  great way to sample our award-winning Signature Line and Special Reserve bars.  The deep berry jam flavor profile of the Ecuador “Esmeraldas” bar is a distinct contrast to the toasted marshmallow and graham cracker flavor notes of our Colombia “Boyaca” bar.  In both cases the only ingredients are our directly sourced single origin cacao beans, organic cane sugar and our own, freshly pressed single origin cacao beans – the different flavors are due entirely to the flavor differences in the beans and the way we roast and conch them to bring out the best flavors.

The three Good-Food-Award-winning Special Reserve bars all begin with directly sourced single origin beans, and we pair those flavors with some of our favorite locally sourced products – Lawley’s Rum and Putnam Rye Whiskey from craft distiller Boston Harbor Distillery, and single origin Las Palomas coffee from single origin coffee pioneer George Howell Coffee.  Because the chocolate we use for both the Lawley’s Rum bar and the Putnam Rye Whiskey bar is our Esmeraldas our can try them side by side to get an understanding of which flavors are coming from the chocolate and which are coming from the rum and whiskey.

Oh, and did we mention each of the Special Reserve bars in this collection have also won an Academy of Chocolate Gold award?  🏅
